Only Drappier carries out the foaming, stirring and individual disgorging of each bottle from the half-bottle to the Melchizedec (30 l.).
This traditional technique gives the wine an exceptional freshness and finesse of effervescence.
It is all these criteria that make the Maison Drappier one of the best Champagne producers (ranked **** excellent in the Parker Guide).
During the blending process, we do not seek homogeneity, but rather the maximum expression of each cuvée as it is born. Fiercely opposed to the excessive use of sulphur, we use the lowest doses in the profession. The resulting Champagnes thus have more natural colours with rich, even coppery golds and more full-bodied aromas.
